Knifehead was a much later kaiju, and would therefore likely have a significant advantage.

But trespassers skin could withstand almost any conventional weapon. This includes knives.
First off, I'd like to apologise for being almost a year late to this.
I personally think using the stats would be the best way of deciding the victor. Using visuals from the movie would be an inefficient way of debating this for two reasons:
1) in real life, size isn't a very good way of finding out the muscle mass of an animal. Giganotosaurus was larger than Tyrannosaurus, yet Tyrannosaurus had a much greater muscle mass, and overall weight.
2) pacific rim is horrible at replicating the actual size and weight of pretty much anything in the entire movie.
Trespasser outweighs Knifehead by 80 tons, which is probably due to trespasser's fin adding extra weight. Trespasser also has a greater speed (speed: 7 strength: 5 armor: 4). Despite being slightly lighter, and even slower than Trespasser, Knifehead exceeds Trespasser in two categories: strength, and armor. (speed: 6 strength: 7 armor: 7).
I personally think Knifehead would win. The "knife" would probably be able to break through Trespasser's level 4 armor since it was able to tear through gypsy danger's level 6 armor like paper. Trespasser's speed advantage probably wouldn't help, since no kaiju in the entire movie could dodge for sh*t (which includes Slattern). And I doubt the slight weight advantage would help either. 80 tons isn't that much weight in the pacific rim universe.
If Knifehead were to apply considerable force behind a thrust maneuver, it could possibly pierce through Trespasser's hide and kill it.
